Ingredients
- 2 racks of lamb (about 1 kg total)
- 2 tbsp olive oil
- 1 tsp sea salt
- 1 tsp black pepper
For the Herb Crust:
- 1 cup breadcrumbs
- 2 tbsp Dijon mustard
- 2 cloves garlic, minced
- 2 tbsp fresh parsley, chopped
- 1 tsp rosemary, chopped
- 1 tsp thyme, chopped
- 2 tbsp olive oil
Preparation
- Prepare Lamb: Preheat oven to 200°C (400°F). Trim excess fat from lamb racks. Rub with olive oil, salt, and pepper.
- Sear and Coat: Heat a skillet over high heat. Sear lamb racks on all sides until browned. Brush each rack with Dijon mustard.
- Make Herb Crust: In a bowl, mix breadcrumbs, garlic, parsley, rosemary, thyme, and olive oil. Press the mixture onto the mustard-coated lamb.
- Roast to Perfection: Place lamb on a baking tray and roast for 20–25 minutes for medium-rare (internal temperature: 57°C/135°F). Let rest for 10 minutes before slicing.
